Madder, obtained from the root of the plant Rubia tinctoria, is the only true vegetable red, although you only tend to get a wonderful brick red colour when you use hard water to dye with. Otherwise, you get peaches pinks, corals and oranges – depending on temperature and the alkalinity of your water.
